Which edition is worth it
The $20 gap buys cosmetic and convenience content, meaning vehicles, weapons and apparel, rather than story or map. Rockstar's own wording is that the Ultimate items are threaded across the story rather than dropped in your garage at the start, so they arrive as you play.
Nothing in the Ultimate Edition has been shown to affect completion, trophies or the ending. If you want the game, the Standard Edition is the game.
